Our basics classes are chock full of information. Follow a few rules and you’ll never buy commercially made bread again, we’ll teach you how to read your bread and diagnose faults before they happen. Tips that only bakers know you’ll gain, we’ll make you a bread star.

This month- Wholemeal, Rye, Cornbread roll & loaves Learn how to hand make them all, prove, knock-back then bake & even take home your own sourdough starter!

Your Chef: Paul McDonald

Paul is a classically trained chef with a sense of style, a local with worldwide experience & expertise. A commercial cookery teacher , with his fingers in pies as diverse as judging for national restaurants to providing long distance learning to remote & rural chefs . Loaded with passion for what he does, a true Gemini, Paul is always looking for the next big thing, and this is it.
Passionate about fresh, modern cuisine that’s accessible to everyone, he has been involved in kitchens since he graduated from UK culinary school.  He’s now opening a beautifully sustainable bed & breakfast in a secret location & between mentoring students at Aria, Flying Fish, China Doll, Bathers Pavilion & Quay he’s working hard honing his skills on the pans at an award winning beach-side restaurant. In between all of this he runs a successful personal chef company. He’ll be introducing you to some of the young guns of the Sydney food scene as well as some very established names in the culinary world. The celebration of fine food begins now.
